Filthy Mac ‘n’ Cheese

Can’t go wrong with a bit of cheese..
February is where it’s at and I’m gonna start with a dish you can all manipulate to your own tastes! You’re gonna wanna cook along for this one, not only will we be making it from scratch, you’ll learn some bits and have a laugh too!
For you veggies and vegans you know where to adjust the simple ingredients and make it happen, there’s even vegan cheese ffs! However, don’t stop there as add ins like cherry or sundried tomatoes, spinach and breadcrumbed toppings can all be added to this bad lad.
Need a meat fix? Smoked bacon, chicken, smoked brisket, pulled pork, fecking lobster if you want, go crazy and add it too!
Ingredients (serves 6-8)
250g bacon, chopped
150g butter
150g plain flour
600ml milk
1/2 onion, finely chopped
1 clove garlic, chopped
As much grated cheddar cheese as your arteries can handle, by all means use other hard cheeses but smoked and mozzarella make the sauce a bit stringy.
grated Parmesan cheese
500g macaroni
S&P
Optional extras:
jalapeño
Monterey Jack cheese
Baby tomatoes
Spinach
Brisket
Pulled pork
