Here’s some breaking news for ya!
Howdy all, well what a week it’s already turned out to be, March is certainly “marching” on with all things @cooking_with_coops, but more about that later.
Let me introduce to you @padstow_fish a local business doing great things and expanding at a rate that even I’m finding hard to keep up with. Fresh, sustainably sourced fish straight from the boat, portioned and ready for delivery and market stalls in Cheltenham, Oxford, Malvern, Ledbury, Botley and Bristol! Phew!
So obviously I’ve teamed up with them to bring you #fishfridays on the first Friday of every month, and kicking off March is the mighty cod loin. Meaty, succulent and when cooked correctly, and not from the supermarket, an absolute powerhouse of a fish. So with that in mind I’m not going to fuc.......mess with it too much, simple ingredients for the main part of this plate and the rest is just a suggestion.
Ingredients: (serves 4)
4 x 200g cod steaks
4 tbsp fresh lemon juice, divided, one tbsp for the fish and 3 tbsp for the sauce
2-3 tbsp olive oil
1 tbsp unsalted butter
5 medium cloves garlic, chopped
2 tbsp capers
125ml dry white wine
half bunch chopped fresh parsley
Seasoned Flour
50-100g plain flour
1 tsp cumin
1 tsp paprika
1 dash cayenne powder
1 tsp dried thyme
Salt and pepper
I’m going to do a nice buttery mash and some greens with this but what you get up to is up to you, you’re an adult.
This is going to be the start of good things so let’s “March” on and get it done.
